This is a great and delicious way to make use of extra courgettes! The courgettes make the cake unbelievably moist and the cake stays fresh for ages before drying out. This recipe makes 10 servings.

You can use this as a base recipe to experiment with carrot or beetroot grated in instead



- 220g plain flour

- 30g cocoa powder

- 2 tsp baking powder

- 250g white sugar

- 100g cooking oil

- 3 eggs

- 360g of grated courgette


- Preheat oven to 180C

- Sieve: flour, cocoa powder, baking powder

- Add all the other ingredients and whisk

- Pour the batter into a large baking dish and bake in oven for about 50 mins until a knife comes out clean
